Using NOTEPAD or your favorite editor, edit autoexec.bat. Add this line:
SET COLCHESS_PATH=E:\ColChess\
Save and exit. Now, in your case, the place you put ColChess might not be E:\ColChess\, but rather somewhere else. Let's pretend you put it in c:\winboard\colchess. In that case, you would add this line:
SET COLCHESS_PATH=C:\Winboard\ColChess\
